Lemon Meringue Pie'tini
Ingredients:
15mL sugar syrup, plus extra for rimming the glass
20mL fresh lemon juice
90mL cream
2 drops vanilla essence
Glass:
Large coupe
Garnish:
Crushed digestive biscuits for the rim
Instructions:
Prepare the Glass:
Rim the edge of the coupe glass with sugar syrup.
Dip the rim into crushed digestive biscuits to coat.
Mix the Cocktail:
In a cocktail shaker, combine the Little Juniper Little Cello Limoncello, sugar syrup, fresh lemon juice, cream, and vanilla essence.
Add ice and shake vigorously until well chilled.
Serve:
Strain the mixture into the prepared coupe glass.
