Little Juniper Distilling, located in the foothills of Adelaide, South Australia started with a big dream, a passion for fine spirits, and a curiosity for the alchemy of flavour.
Using sustainable business practices with a mix of traditional distilling and new age technology, we source our collection of organic botanicals locally and from around the world to produce premium small batch, hand-crafted South Australian spirits.
We distil our spirits on site in our custom designed 200 litre still named “Little Tom”. Named after the founder Stuart’s son Thomas, known for being a little volatile and hot headed in his younger years, he has mellowed to become a fine gentleman, curious about the world, and science, and full of creativity.
Our aim is to start small but grow to be bold and refined with “Big Lola” our larger still on the horizon with designs in progress. Big Lola will be named after Stuart's daughter Lola, a young spirit, full of big ideas and ready to see the world!
At Little Juniper we utilise the latest state of the art vacuum distilling methods to help us better understand the botanical we use.
Helga, our German chilled rotary vacuum evaporator, allows us to experiment on a small scale, whilst also giving us the opportunity to distil finer botanicals that would otherwise be ruined in the traditional process.
Usually found in a high-tech laboratory, Helga allows us to care for our young botanicals in a way that no other can. She uses strict rules and shows no tolerance for heated discussions, with her cool head ruling the roost in our R&D department.
Our Signature gin is a full bodied, juniper forward, single shot London Dry style gin with a delicious twist.
