Little Juniper Clover Club Cocktail
A great cocktail for those who like sweet raspberries.
Add the following to an empty cocktail shaker:
30 ml Lemon Juice
30 ml of fresh or frozen raspberries or raspberry syrup (see below for details)
15 ml simple syrup (not needed if raspberry syrup is used)
Add 1 egg white to the mix and shake for 10 seconds.
Fill the shaker with ice and shake vigorously for another 10 seconds.
Double strain and discard the ice.
Pour your cocktail into a chilled cocktail glass and garnish with a raspberry or two...or three.
Add equal parts raspberries, water and sugar to a saucepan and heat on medium, careful not to boil.
Stir until sugar has dissolved.
Turn heat off and muddle the raspberries.
Double strain into a bottle or jar.
